You need
- 90 grams of Flour
- 120 grams of Sugar
- 40 grams of Melted Butter
- 7 Whole eggs
- Vanilla Essence
Break all 7 eggs into a bowl and whisk or beat together with an electric beater until the mixture doubles in size and forms like soap. (it should peak at the top) Beat in the Sugar and whisk well.
Whisking by hand takes a long time and a lot of energy. You can give the kids to use the whisk but YOU can use an electric beater which will take you 2 to 3 minutes.
Fold in the flour (don't beat) the melted butter and finally the teaspoon of vanilla essence.
Preheat the oven to 200 degrees Celsius/400 degrees Fahrenheit or Gas-6
Quickly pour in the mixture into a baking tin and bake in the preheated oven for 20-30 minutes.
Do the skewer test to see if the cake is ready.
Muffins
You can pour any left over mixture into muffin trays, add chopped fruit such as peaches, pineapple, strawberry or blueberry before popping it into the oven.
Topping the Cake
You need
- Whipped Cream
- Chopped Fruits of your Choice (Mango, Pineapple, strawberry, Peaches)
- Other Toppings can include grated Chocolate, Marshmallows,even roasted cashew
When the cake is done, leave it to cool for 10 minutes and transfer to board or wire rack. Split the cake Horizontally and cover the top of the bottom half in whipped cream and fruit. Put back the top half and Press firmly. Now cover up the whole cake with Whipped cream and decorate with Fruits of your Choice !
*This is a very light and mildly sweet cake which can also be served as a light breakfast with more fruit than whipped cream.
