Open Sandwiches

You need

  • Sliced Bread (Brown, Bran or Wholewheat)
  • Butter

Sandwich Fillings

  • Chopped Mushrooms
  • Sliced Tomatoes
  • Sliced Onion Rings
  • Capsicum or Green/Red Peppers Chopped
  • Broccoli
  • Cauliflower
  • Cooked Meats ( Chicken/Ham/Minced meat)
  • Cheese Sliced or Chopped

Butter the Slices of Bread and layer the Meat, Cheese and Vegetables on top.

Layers can be in this order

  • Bread
  • Sliced Ham
  • Tomatoes and Onions

Vanilla Sponge

You need

  • 90 grams of Flour
  • 120 grams of Sugar
  • 40 grams of Melted Butter
  • 7 Whole eggs
  • Vanilla Essence

Break all 7 eggs into a bowl and whisk or beat together with an electric beater until the mixture doubles in size and forms like soap. (it should peak at the top) Beat in the Sugar and whisk well.

Whisking by hand takes a long time and a lot of energy. You can give the kids to use the whisk but YOU can use an electric beater which will take you 2 to 3 minutes.

Sandwich Fillings

Beetroot with cream cheese [can also be done with carrot] grated, cooked beetroot mixed with cream cheese [according to taste] season as desired

Avacado mashed with a bit of lemon juice, finely chopped onion and finely chopped chicken [left overs work great with this]

Chocolate spread with sliced banana's

Tuna with mayonaise, chopped/grated apple and crunchy nuts [roasted, chopped cashew nuts]

Pineapple chunks mashed with chopped ham, mayonaise and shredded iceberg lettuce

Banana Oat Crunch

Banana Oat Crunch

  • 300g yoghurt
  • 200g custard [pre-prepared]
  • 70g porridge oats
  • 2 tablespoons bee's honey
  • 2 banana's sliced

Mix the Yoghurt and custard together. In a dry pan, toast the oats till just crispy, add the honey and mix well to coat the oats.Cook untill golden and well toasted.

[This can be pre-prepared and stored]

To serve, spoon into a dish, top with the yoghurt custard mix, and sliced banana's. Yo can drizzle with honey if desired.

Spicy Pineapple Chicken

You need:

  • 4 chicken breasts
  • 2tbsps diced pineapple (crushed)
  • 4 large boiled potatoes (sliced)
  • salt and pepper
  • soy sauce
  • 4 tbsps. oil for frying
  • grind together:
  • ginger, garlic, 3 red onions, 1 small green chillie,

Method

Into a medium sixed bowl place the crushed pineapple and mix in the paste. Add salt, pepper and the chicken. Marinade for ½ an hour.

Place a small amount of oil in a shallow pan. Fry the chicken on both sides covering with a lid to cook well over a low fire.
