(to be eaten with steamed rice)

  • handful of steamed spinach
  • handful of shredded cabbage
  • 1 tblsp grated carrots
  • 2 boiled sweet potatoes
  • handful of bean sprouts
  • peanut sauce, salt and pepper

Method

  • 1.wash the spinach and steam without closing the lid for about 1 minute. Pat dry, allow to cool and chop.
  • 2. when cold toss in with the cabbage and carrots
  • 3. dice the boiled sweet potatoes and add to the veggies
  • 4. squeeze out bean sprouts in salt water and throw them in with the veggies.

Peanut sauce

  • 2 tblsps.roasted peanuts
  • 1 clove garlic
  • 1 small green chillie
  • 2 red onions
  • hot water
  • grind all to a smooth paste and add water.

Presentation

Place a cup of steamed rice on a plate and make a well in the centre. Add salt and pepper to the veggies and spoon into the centre. Pour the sauce generously over the veggies.
